In New Jersey, state law (Title 54) sets four quarterly due dates, and each town's tax collector sends the bills and takes the payments. Any grace period after a due date is up to your town. Once it ends, interest runs from the due date. Value appeals go to the County Board of Taxation, and the board has to receive yours by the deadline. A postmark isn't enough.
